Met with chef Miguel and Alex, delivered a case of 2614693 Portico Classic Shrimp, White P&D Tail-on 8/12 4/2.5lb also addressed customer’s concerns and assured them that we have corrected the issue – See recap below:
Items of concern: 2614693 Portico Classic Shrimp, White P&D Tail-on 8/12 4/2.5lb and 4325470 Portico® Imperial Shrimp, White, Green Headless, Block 16/20 USA 10/5lb.Customer stated that the 8/12 shrank more than usual and the domestic shrimp are not consistent in sizing.
The 8/12 were consistent on the raw sizing chart – I asked the chef to cook them for 20 seconds less than the usual, however, the shrimp was raw in the middle, so they cooked it to their standards – There was some shrinkage but still met the cooked shrimp size chart – Customer stated that they will still use our shrimp and let us know if the issue continues – I reiterated that we don’t want to lose their business and we’ll do what needs to be done if the issue persists.
The domestic 16/20 shell on shrimp did show a variance on the size chert including some close to 13/15 size (defrosted) – I sent a case of 6420665 Portico Imperial Shrimp, White GH 16/20 6/4lbfor the customer to try – Osvaldo will follow up and let us know the results
NOTE: Customer currently using the following Portico shrimp for a total of 70 cases weekly
