Great GSM. It was a round robin format with 3 -45 minute breakout sessions. Each breakout session had 30-35 SCs 3 DSMs and a DLS. We had small groups of 5 rotate through the room to each table. Served 145 portions during the show. Some comments from SCs: Wow that is delicious; clean fresh taste; I love the texture; I can sell that, money maker for my customers, I love that it is being marketed as European sea bass it makes it very clear and easy to sell. A sample case left for chef Macklin to present over the course of his next 25 business reviews in the test kitchen. Received great support from the PPS team and Italian specialist to keep up with fresh product to serve. Plenty of POS of products picked up on Bronzini over a 100 copies. San Fran admin was kind enough to keep me supplied with POS as they made additional color copies of whatever I needed throughout the sessions.
